Inspire Me: Healthy (Week #4)

All In My Twenties

It’s me again Vern.  And it’s Thursday again.  
Time for another weekly dose of fail or pass on this get healthy challenge I’m commited to.

I lost one more pound peeps.

Trumpets blare and confetti falls.  Can I get a big Whoop!  Whoop!!

Truthfully though, I have no idea how I lost that pound??!!  I worked out ZERO this week.  Like not even for a smidgen did I do any real working out.  You see, between full time work – and dinner – and dishes – and packing lunches – and kiddo’s homework – and kiddo’s karate – and cleaning … well, my schedule is horrific!!  Until yesterday I just could not figure out how I was going to fit everything I needed to into a 24 hour day.  

I know whine whine whine on my part, but it’s true.  I was freaking out and stressing … like totally to the max!! [Yes, I can say that quote because I am a child of the 80’s].

But my hubby – who is such a trooper and so understanding of my OCD need for structure – helped me with a plan.  And what a great plan it is.

So yes, this week I did manage to lose 1 pound … and I’m gonna praise and shout and milk it for that one pound even if I did not “earn” it 🙂  Hopefully with my new schedule starting Saturday that number will continue to rise!!

Now, I guess I could stop this post right here … but how boring would that be??  So instead I’ll close by giving ya’ll this really cool recipe for Apple Oatmeal Muffins.  The original recipe for this is found on About.com … but I kinda tweaked it a smidge or two to make it healthier.  And they ROCK in taste!

Apple Oatmeal Muffins

Ingredients:
2 cups apple, peeled and shredded
1 1/2 cups all-purpose flour
1 cup quick oats
2/3 cup firmly packed brown sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup fat-free milk
2 tbsp applesauce
1 tsp vanilla extract
1 cup plain greek yogurt
2 egg whites

Preparation:
Spoon flour into measuring cups and level with a knife. Place flour in a large mixing bowl and add oats, brown sugar, baking powder, baking soda, salt and cinnamon. Stir with a whisk. In a separate bowl combine milk, applesauce, vanilla, yogurt and egg whites, stirring until well blended. Add wet ingredients to the dry ingredients and stir until just moist. Add apple to mixture and stir. Spoon batter into a well greased muffin tin. Bake at 400 degrees for 20 minutes.
